  • 1 pound large shrimp, peeled and deveined (fresh or thawed frozen)
  • 2 ears of corn, cut into thirds
  • 1 pound small red potatoes, halved
  • 8 ounces smoked sausage, sliced (Andouille or kielbasa recommended)
  • 2 tablespoons olive oil or melted butter
  • Juice of 1 lemon
  • 1 tablespoon paprika (smoked paprika optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine paprika, garlic powder, onion powder, oregano, thyme, cayenne, black pepper, and salt to make the Cajun seasoning.
  3. In a large mixing bowl, toss the halved red potatoes with 1 tablespoon olive oil or melted butter and half of the Cajun seasoning until evenly coated.
  4. Tear off four large sheets of heavy-duty aluminum foil (about 12×12 inches each). Divide the seasoned potatoes evenly among the foil sheets, placing them in the center.
  5. Add corn pieces, sausage slices, and shrimp on top of the potatoes on each foil sheet.
  6. Drizzle the remaining olive oil or butter over the ingredients and sprinkle the rest of the Cajun seasoning evenly.
  7. Squeeze lemon juice evenly over each packet and seal the foil tightly to create a pouch.
  8. Place the foil packets on a baking sheet and bake for 20-25 minutes until shrimp are pink and opaque, potatoes are tender, and corn is juicy. Check at 20 minutes for extra-large shrimp to avoid overcooking.
  9. Carefully open the packets to avoid hot steam and serve immediately. Optionally garnish with chopped parsley or lemon wedges.

Notes

Do not overcook shrimp; they are done when pink and curled in a loose ‘C’ shape. Use heavy-duty foil to prevent tearing and leaking. Toss potatoes with seasoning and oil before assembling packets for better flavor. Let packets rest a few minutes after baking before opening to allow steam to finish cooking. For a grill option, cook packets on medium heat for 15-20 minutes.
