  • 1/3 cup (113 g) honey
  • 1/4 cup (60 ml) low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons (30 ml) apple cider vinegar or rice vinegar
  • 1/4 cup (60 ml) water (or chicken broth for extra flavor)
  • 1 tablespoon (8 g) cornstarch (optional, for thickening)
  • 1/2 teaspoon freshly ground black pepper
  • Optional toppings: sesame seeds and sliced green onions

Instructions

  1. In a medium mixing bowl, whisk together honey, soy sauce, minced garlic, vinegar, water, and black pepper. Set aside.
  2. Place chicken thighs in the crockpot in a single layer, skin side up.
  3. Pour the prepared sauce evenly over the chicken thighs without stirring.
  4. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until chicken is fall-apart tender and reaches 165°F (74°C).
  5. Optional: Remove chicken and set aside. Mix cornstarch with cold water to make a slurry, stir into crockpot sauce, and cook on high for 10-15 minutes until thickened.
  6. Spoon thickened sauce over chicken and garnish with sesame seeds and sliced green onions if desired.
  7. Serve hot with steamed rice or favorite side dishes.

Notes

For crispier skin, sear chicken thighs in a hot pan before adding to crockpot. To keep gluten-free, substitute soy sauce with tamari or coconut aminos. Avoid overcrowding crockpot for even cooking. If sauce is too thin, cook uncovered longer instead of adding extra cornstarch slurry.
