  • 2 medium yellow onions, thinly sliced
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon olive oil
  • 4 oz (115 g) blue cheese, crumbled
  • 2 cups fresh arugula
  • 4 burger buns (brioche or sturdy buns)
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • Optional: Dijon mustard or mayo for spreading on buns

Instructions

  1. Prepare the caramelized onions: Heat 1 tablespoon olive oil and 2 tablespoons butter in a skillet over medium-low heat. Add thinly sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until onions are deep golden brown and sweet-smelling, about 20-25 minutes. If onions stick or brown too fast, lower heat and add a splash of water.
  2. Mix and shape burger patties: While onions cook, place ground beef in a bowl. Season with garlic powder, salt, and pepper. Mix lightly to avoid tough patties. Divide into 4 equal portions and shape into patties about 4 inches wide, making a slight indentation in the center of each.
  3. Cook the burgers: In a hot skillet, sear patties over medium-high heat for 3-4 minutes per side for medium doneness (internal temp 160°F/71°C). In the last minute, sprinkle crumbled blue cheese over each patty and cover the pan to melt the cheese gently.
  4. Toast the buns: Split buns and toast lightly in the skillet or under a broiler until golden and slightly crisp, about 2-3 minutes.
  5. Assemble the burger: Spread optional Dijon mustard or mayo on buns. Place the patty with melted blue cheese on the bottom bun. Top with caramelized onions and fresh arugula. Close with the top bun and press lightly.

Notes

Cook onions low and slow to avoid burning; add water if sticking. Do not overwork beef to keep patties tender. Add blue cheese at the last minute and cover pan to melt gently. Toast buns last to keep warm and crisp. Arugula adds peppery freshness; baby spinach can be substituted. For gluten-free, use gluten-free buns or lettuce wraps.
