A quick and easy baked cod recipe featuring a rich garlic butter sauce with fresh lemon juice and zest, delivering a light yet indulgent meal perfect for busy weeknights.

Ingredients

Scale
  • 4 cod fillets (6 ounces / 170 g each; fresh or thawed if frozen)
  • 4 tablespoons (57 g) unsalted butter, melted
  • 4 large garlic cloves, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, chopped (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine melted butter with minced garlic, fresh lemon juice, lemon zest, salt, and freshly ground black pepper. Mix well until combined and aromatic.
  3. Place the cod fillets in a single layer in a baking dish. Pat dry with paper towels.
  4. Brush or spoon the garlic butter sauce generously over each fillet, covering tops and sides.
  5. Sprinkle chopped fresh parsley over the fish, if using.
  6. Bake uncovered for 12-15 minutes or until the cod flakes easily with a fork.
  7. Check the fish by gently inserting a fork into the thickest part; it should flake easily but remain moist.
  8. Remove from the oven and let rest for 2 minutes.
  9. Serve immediately with an extra lemon wedge on the side.

Notes

Do not overcook the cod to keep it moist and flaky. You can prepare the garlic butter sauce ahead and refrigerate it, warming gently before use. For a dairy-free option, substitute butter with olive oil or vegan butter. Fresh lemon juice and zest provide the best flavor, but bottled lemon juice can be used in a pinch. Let the fish rest after baking to allow flavors to meld and juices to redistribute.
