Flavorful Grilled Peach Burgers with Brie and Arugula

These grilled peach burgers combine sweet, smoky caramelized peaches with creamy brie and peppery arugula for a fresh and indulgent summer BBQ treat. Ready in under 30 minutes, they are perfect for quick dinners or casual gatherings.

  • 1 pound (450 g) ground beef (80/20 blend)
  • 2 large ripe peaches, halved and pitted
  • 4 oz (115 g) brie cheese, sliced into thin rounds
  • 2 cups fresh arugula, washed and dried
  • 4 brioche buns, lightly toasted
  • 2 tablespoons olive oil, for brushing peaches and buns
  • Salt and pepper, to taste
  • Optional: drizzle of honey or balsamic glaze

Instructions

  1. In a mixing bowl, combine ground beef with about 1 teaspoon salt and ½ teaspoon pepper. Gently mix without overworking the meat.
  2. Divide the mixture into 4 equal portions and shape each into a ¾-inch (2 cm) thick patty. Press a slight indentation in the center of each patty.
  3. Preheat grill or grill pan to medium-high heat (about 400°F / 200°C). Brush grill grates or pan with olive oil.
  4. Halve and pit peaches. Brush cut sides with olive oil and optionally sprinkle with salt or a touch of sugar.
  5. Grill peaches cut-side down for 3-4 minutes until char marks appear and fruit softens slightly. Remove and set aside.
  6. Place burger patties on the grill and cook for 4-5 minutes per side for medium doneness (internal temperature 160°F / 71°C). In the last 2 minutes, top each patty with a slice of brie and close the grill lid or cover with foil to melt the cheese.
  7. Lightly brush brioche buns with olive oil and toast on the grill for 1-2 minutes until golden and slightly crispy.
  8. Assemble burgers by layering bottom bun with arugula, placing the burger with melted brie on top, then adding grilled peach halves. Finish with the top bun.
  9. Serve immediately while warm and cheese is gooey.

Notes

Do not overmix the meat to keep patties tender. Press an indentation in the center of patties to prevent puffing. Brush grill grates with oil to prevent sticking. Watch peaches closely to avoid burning. Melt brie gently at the end to avoid oiliness. Let burgers rest 3-5 minutes before assembling. For gluten-free, use gluten-free buns or lettuce wraps. For dairy-free, substitute brie with vegan cheese alternatives.
