A simple and comforting honey mustard glazed ham with caramelized pineapple, perfect for holidays and family gatherings. The glaze is sweet, tangy, and slightly smoky, creating a juicy and flavorful ham.

  • 68 pounds bone-in fully cooked ham, preferably spiral-cut
  • ½ cup honey (120 ml), preferably raw or mild-flavored
  • ¼ cup Dijon mustard (60 ml)
  • 2 tablespoons whole-grain mustard (30 ml)
  • ¼ cup packed brown sugar (50 grams)
  • 1 can pineapple rings (about 8 ounces/227 grams) or 4-5 fresh pineapple slices, peeled and cored
  • ½ teaspoon ground cloves (1 gram)
  • 1 tablespoon apple cider vinegar (15 ml)
  • 2 tablespoons unsalted butter (28 grams), melted
  • ¼ teaspoon freshly ground black pepper (0.5 grams)

Instructions

  1. Preheat the oven to 325°F (163°C). Allow the oven to come fully to temperature before placing the ham inside.
  2. In a small saucepan, combine honey, Dijon mustard, whole-grain mustard, brown sugar, apple cider vinegar, melted butter, ground cloves, and freshly ground black pepper. Warm over low heat, stirring gently until sugar dissolves and glaze is smooth (about 5 minutes). Remove from heat and set aside.
  3. Place the ham on a rack in the roasting pan, fat side up. Score the surface in a diamond pattern about ¼ inch (6 mm) deep to allow the glaze to penetrate.
  4. Using a basting brush, liberally coat the ham with half of the prepared honey mustard glaze. Reserve the rest for later.
  5. Place pineapple slices over the ham, securing them with toothpicks if needed.
  6. Place the roasting pan in the oven. Bake for about 1½ to 2 hours (15-18 minutes per pound), basting every 20 minutes with the remaining glaze. The glaze should thicken and caramelize, creating a sticky, shiny coating.
  7. Check the internal temperature with a meat thermometer; when the ham reaches 140°F (60°C), it is warmed through and ready.
  8. For the last 5 minutes, switch the oven to broil on low and watch carefully until the pineapple edges and glaze develop a deep caramel color. Do not leave unattended.
  9. Remove the ham from the oven and let it rest for 10-15 minutes before slicing to allow juices to redistribute.

Notes

If glaze thickens or burns during roasting, add a splash of water or apple cider vinegar to thin it out when basting. Use a meat thermometer to avoid overcooking. Broil carefully for caramelization as it can burn quickly. Fresh pineapple caramelizes better but canned pineapple works well. Can substitute brown sugar with coconut sugar or maple syrup for different sweetness profiles. For dairy-free, use coconut oil instead of butter.
