A simple and delicious summer dessert featuring grilled peach halves glazed with a sweet and smoky maple bourbon mixture, perfect for relaxed evenings or gatherings.

  • 4 large ripe peaches, halved and pitted
  • 1/4 cup pure maple syrup (Grade A amber recommended)
  • 2 tablespoons bourbon
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon ground cinnamon
  • Pinch of sea salt
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your grill to medium-high heat, about 375°F (190°C).
  2. Rinse and dry the peaches, then slice them in half and remove the pits, leaving the skin on.
  3. In a small mixing bowl, whisk together maple syrup, bourbon, melted butter, ground cinnamon, sea salt, and vanilla extract until smooth and shiny.
  4. Brush the cut side of each peach half generously with the glaze using a basting brush. Save some glaze for later.
  5. Place the peaches cut side down on the grill grates and grill for 4-5 minutes until grill marks and caramelization appear, peaches soften slightly but remain firm.
  6. Flip the peaches over, brush the grilled side with more glaze, and grill for an additional 3-4 minutes to warm through and develop flavor.
  7. Remove the peaches from the grill and let them rest for a couple of minutes to allow the glaze to set and flavors to meld.

Notes

For a dairy-free version, substitute butter with melted coconut oil. Bourbon can be replaced with dark rum or extra vanilla extract for different flavor profiles. Use indirect heat or move peaches to cooler grill areas if flare-ups occur. Rest peaches after grilling to let juices redistribute. Leftovers can be stored in an airtight container in the fridge for up to 2 days and reheated gently.
