These freezer-friendly breakfast burritos are a lifesaver for busy mornings. Made with fluffy scrambled eggs, savory sausage, and crispy hash browns, they can be prepped in advance and reheated in under 2 minutes.

Ingredients

Scale
  • 12 large eggs (room temperature)
  • 1/2 cup cottage cheese (full-fat preferred)
  • 1/4 cup milk (any kind)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter or oil
  • 1 pound breakfast sausage (or bacon, chorizo, or plant-based crumbles)
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cups frozen shredded hash browns (thawed and patted dry)
  • 2 cups shredded cheddar cheese (or pepper jack)
  • 1 can black beans, drained and rinsed (optional)
  • 8–10 large flour tortillas (10-inch, burrito-size)
  • Parchment paper or foil for wrapping

Instructions

  1. Cook the sausage: In a large skillet over medium heat, cook the breakfast sausage, breaking it into crumbles as it browns (6-8 minutes). Transfer to a plate lined with paper towels using a slotted spoon. Leave about 1 tablespoon of drippings in the pan.
  2. Sauté the veggies: In the same skillet, add the diced onion and bell pepper. Cook for 4-5 minutes until softened. Add the thawed hash browns and cook for another 3-4 minutes, stirring occasionally, until slightly crispy. Transfer to a large mixing bowl and let cool slightly.
  3. Prepare the eggs: In a medium bowl, whisk together the eggs, cottage cheese, milk, salt, and pepper until uniform and slightly frothy (about 30 seconds).
  4. Scramble the eggs: Wipe out the skillet and return to medium-low heat. Add the butter and let it melt. Pour in the egg mixture and let it sit undisturbed for 30 seconds. Using a silicone spatula, gently push the cooked eggs from the edges toward the center. Continue until the eggs are just set but still soft and creamy (3-4 minutes). Remove from heat immediately.
  5. Combine the filling: Add the cooked sausage and scrambled eggs to the bowl with the veggies. Add the shredded cheese and black beans (if using). Gently fold everything together until evenly distributed. Taste and adjust seasoning. Let the mixture cool for 10-15 minutes.
  6. Assemble the burritos: Lay a tortilla on a clean work surface. Spoon about 3/4 cup of the filling into the center, forming a log shape. Fold the sides inward over the filling, then fold the bottom flap up and over the filling, tucking it snugly. Roll tightly away from you until you have a neat cylinder. Repeat with remaining tortillas and filling.
  7. Wrap for freezing: Place each burrito on a piece of parchment paper or foil. Wrap tightly, folding in the ends like a candy wrapper. Place wrapped burritos on a baking sheet in a single layer and freeze for 2 hours, or until solid.
  8. Transfer to bags: Once frozen solid, transfer the burritos to freezer-safe zip-top bags. Squeeze out as much air as possible before sealing. Label with the date and contents.

Notes

Don’t skip the cooling step for the filling to prevent soggy tortillas. Pat hash browns dry thoroughly. Use room temperature eggs for best texture. Freeze burritos flat on a baking sheet before bagging for even freezing and easy stacking.
