A quick and easy Asian cucumber salad featuring crisp cucumbers, toasted sesame seeds, and a tangy, sweet dressing. Perfect as a refreshing side dish for any occasion.

  • 2 medium English cucumbers, thinly sliced (about 400g or 14 oz)
  • 1 teaspoon salt
  • 3 tablespoons rice vinegar
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons toasted sesame seeds
  • 2 stalks green onions, thinly sliced

Instructions

  1. Wash and thinly slice the English cucumbers using a sharp knife or mandoline. Place them in a mixing bowl and sprinkle with 1 teaspoon salt. Toss gently to coat and let sit for 15 minutes to draw out excess moisture.
  2. While cucumbers rest, toast 2 tablespoons of raw sesame seeds in a dry skillet over medium-low heat for 3-4 minutes, stirring frequently until fragrant and golden. Remove from heat and let cool.
  3. In a small bowl or jar, whisk together 3 tablespoons rice vinegar, 1 tablespoon low-sodium soy sauce, 1 tablespoon toasted sesame oil, 1 teaspoon honey or maple syrup, minced garlic, grated ginger, and optional red pepper flakes until smooth.
  4. Drain the cucumbers, discarding the liquid, and gently pat the slices dry with paper towels to avoid watering down the salad.
  5. Return cucumbers to the bowl, pour the dressing over, and toss gently to coat evenly. Add toasted sesame seeds and sliced green onions, then toss once more.
  6. Refrigerate the salad for at least 20 minutes before serving to allow flavors to meld. Serve chilled or at room temperature.

Do not skip salting cucumbers to keep salad crisp. Toast sesame seeds on medium-low heat and stir constantly to avoid burning. Use fresh ginger and garlic for best flavor. Chill salad for at least 20 minutes for optimal taste. Adjust seasoning after chilling if needed. Salad keeps well for up to 2 days refrigerated but is best fresh.
