  • 1 pint (300g) cherry or grape tomatoes, washed and dried
  • 8 ounces (225g) fresh mozzarella balls (bocconcini or ciliegine), drained
  • 1 small bunch fresh basil leaves, washed and patted dry
  • Around 40 whole wheat crackers (such as Triscuit or similar)
  • 2 tablespoons extra virgin olive oil, divided
  • 1 tablespoon balsamic glaze (optional)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Wooden toothpicks or mini skewers (about 40) for assembling

Instructions

  1. Wash and dry the cherry tomatoes thoroughly. Place them in a mixing bowl and drizzle with 1 tablespoon of extra virgin olive oil, sprinkle with a pinch of sea salt and freshly ground black pepper. Toss gently to coat evenly.
  2. Remove the mozzarella balls from their liquid and pat them dry with paper towels to prevent excess moisture.
  3. Gently wash the basil leaves and pat dry completely.
  4. Take a mini skewer or toothpick and thread one cherry tomato, followed by a basil leaf (folded if large), then one mozzarella ball. Repeat until all ingredients are used. Keep the skewers refrigerated as you go to maintain freshness.
  5. Lay out whole wheat crackers on your serving platter. Place one assembled skewer on top of each cracker. If crackers are smaller or brittle, serve skewers alongside crackers instead.
  6. Drizzle the remaining tablespoon of olive oil over the skewers and crackers. If using balsamic glaze, lightly drizzle it over the skewers. Finish with a light sprinkle of sea salt and pepper.
  7. Refrigerate the assembled skewers for 10-15 minutes before serving to let flavors meld and keep everything crisp and fresh.
