  • Juice of 2 limes (about 3 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey or agave syrup
  • Salt to taste
  • Freshly ground black pepper to taste
  • Optional: diced cucumber for extra crunch and freshness

Instructions

  1. Peel the peaches by blanching them in boiling water for 30 seconds, then plunge into ice water to slip off the skin easily. Finely dice the peaches into bite-sized pieces.
  2. Cut the jalapeño in half lengthwise and scrape out the seeds with a spoon unless more heat is desired. Mince finely.
  3. Finely dice the red onion to small pieces to add crunch without overpowering.
  4. Roughly chop the fresh cilantro leaves, ensuring they are fresh and vibrant.
  5. In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper to make the dressing.
  6. In a medium mixing bowl, gently toss the diced peaches, jalapeño, onion, and cilantro together.
  7. Pour the dressing over the mixture and stir carefully to coat everything evenly without bruising the fruit.
  8. Taste and adjust seasoning with more salt, pepper, lime juice, or honey as needed.
