A refreshing Southern classic sweet tea infused with ripe peaches and fresh mint, perfect for cooling off on hot summer days.

Ingredients

Scale
  • 68 black tea bags
  • 2 ripe peaches, sliced
  • 1015 fresh mint leaves
  • 3/4 cup (150g) granulated sugar
  • 8 cups (1.9 liters) filtered water
  • 12 tablespoons lemon juice (optional)

Instructions

  1. Bring 8 cups (1.9 liters) of filtered water to a rolling boil (about 5-7 minutes).
  2. Place 6-8 black tea bags in a large heatproof pitcher or jar. Pour boiling water over the tea bags and steep for 5-7 minutes. Do not oversteep to avoid bitterness.
  3. While the tea steeps, wash and slice 2 ripe peaches into thin wedges. No need to peel unless preferred.
  4. Remove the tea bags and stir in 3/4 cup (150g) granulated sugar until fully dissolved while the tea is still hot.
  5. Add the sliced peaches directly into the sweetened tea. Refrigerate for at least 1-2 hours to chill and infuse peach flavor.
  6. Just before serving, gently bruise 10-15 fresh mint leaves using a muddler or the back of a spoon to release oils.
  7. Add the bruised mint leaves to the tea. Optionally, add 1-2 tablespoons fresh lemon juice to brighten the flavor. Serve over ice with extra peach slices or mint sprigs for garnish.

Notes

Do not oversteep the tea to avoid bitterness. Sweeten while the tea is hot for best sugar dissolution. Use ripe peaches for optimal flavor and avoid mushy fruit to prevent cloudiness. Bruise mint gently to release oils without shredding leaves. Chill tea sufficiently for best flavor. For a clearer tea, strain out peaches and mint before serving.
