Fresh Star-Spangled Jello Parfait Cups Easy 4th of July Summer Recipe

A quick and easy layered dessert featuring red, white, and blue Jello parfait cups topped with fresh berries, perfect for summer celebrations and 4th of July parties.

  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) cold water or fresh strawberry juice
  • 1 package (3 oz / 85 g) blue raspberry gelatin
  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) cold water or blueberry juice
  • 1 cup (240 ml) heavy cream or full-fat coconut cream
  • 2 tbsp powdered sugar (optional)
  • 1 tsp vanilla extract
  • 1/2 cup (75 g) fresh blueberries
  • 1/2 cup (75 g) fresh strawberries, sliced
  • Optional garnishes: fresh mint leaves, mini star-shaped sprinkles or edible glitter

Instructions

  1. Prepare the Red Jello Layer: In a medium bowl, sprinkle one package (3 oz / 85 g) of strawberry or cherry gelatin over 1 cup (240 ml) of boiling water. Stir briskly until completely dissolved. Add 1/2 cup (120 ml) of cold water or fresh strawberry juice and mix. Pour about 1/3 cup (80 ml) into each serving cup, filling just the bottom. Place cups in the refrigerator for about 30 minutes or until the layer is firm but still slightly tacky.
  2. Prepare the White Cream Layer: In a separate bowl, whip 1 cup (240 ml) of heavy cream with 2 tablespoons powdered sugar and 1 teaspoon vanilla extract until soft peaks form. Set aside in the fridge until ready to use.
  3. Prepare the Blue Jello Layer: Repeat the gelatin preparation with the blue raspberry gelatin: dissolve 1 package in 1 cup (240 ml) boiling water, then stir in 1/2 cup (120 ml) cold water or blueberry juice. Cool to room temperature but do not let it set.
  4. Assemble the Parfait – Second Layer: Once the red layer is tacky, spoon or pipe a thin layer of whipped cream (about 2 tablespoons) over each cup. Then gently pour the blue gelatin over the cream layer, about 1/3 cup (80 ml) per cup. Return to the fridge for about 30 minutes or until set but still slightly sticky.
  5. Third Layer – Final Cream Layer: Add another layer of whipped cream over the blue gelatin once set. Use 3-4 tablespoons for a fuller topping. Smooth the tops gently with a spoon.
  6. Top with Fresh Fruit: Garnish each parfait with a handful of fresh blueberries and sliced strawberries. Add a sprig of mint or star-shaped sprinkles if desired.
  7. Chill and Serve: Chill the parfait cups for at least another hour to let all layers settle and flavors meld. Serve cold.

Notes

Let each gelatin layer set until firm but still slightly tacky before adding the next to keep layers distinct. Use fresh fruit juice instead of water for more vibrant flavor. Whip cream to soft peaks for best layering. Pour gelatin layers slowly over the back of a spoon to avoid breaking through the cream layer. Avoid freezing gelatin to maintain texture.
