Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Feta cheese, crumbled or cut into small cubes
  • Fresh mint leaves

  • Balsamic glaze, for finishing (optional)
  • Sea salt, a pinch
  • Freshly ground black pepper (optional)
  • Wooden skewers or toothpicks

Instructions

  1. Rinse the watermelon, slice off the rind, and cut the flesh into approximately 1-inch cubes.
  2. Cut or crumble the feta into small cubes about the same size as the watermelon.
  3. Gently pluck fresh mint leaves, selecting small, tender leaves.
  4. Thread one cube of watermelon, one mint leaf (folded if large), and one cube of feta onto each skewer. Repeat if desired for multiple bites per stick.
