Fresh Zesty Peach Salsa Recipe with Cilantro and Lime

A quick and easy fresh peach salsa bursting with juicy peaches, bright lime, fresh cilantro, and a hint of jalapeño heat. Perfect for summer gatherings and pairs well with grilled meats or tortilla chips.

  • 3 medium ripe peaches, diced
  • ½ cup finely chopped fresh cilantro leaves
  • Juice of 2 limes (about 3 tablespoons)
  • ¼ cup finely diced red onion
  • 1 small jalapeño, seeded and minced
  • 1 clove garlic, minced
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil (optional)

Instructions

  1. Wash and dry peaches. Cut away from the pit and dice into roughly ½-inch pieces.
  2. Remove thicker stems from cilantro and finely chop leaves. Place in a mixing bowl.
  3. Finely chop red onion and mince jalapeño (seeded to reduce heat). Add to the bowl with cilantro.
  4. Mince garlic and add to the bowl.
  5. Squeeze juice of 2 limes over the mixture. Add salt, black pepper, and olive oil if using.
  6. Gently fold all ingredients together with a spoon or spatula, keeping peaches intact.
  7. Let salsa rest at room temperature for 10-15 minutes before serving to allow flavors to meld.

Notes

Use ripe but firm peaches for best texture. Adjust jalapeño seeds to control heat. Prepare up to 4 hours ahead and keep chilled. Avoid over-mixing to keep salsa chunky. Fresh lime juice is preferred over bottled.
