  • 10 oz mini marshmallows (280 grams)

  • Pinch of salt
  • Optional: 1/4 cup birthday cake frosting (60 grams)

Instructions

  1. Lightly grease a 9×13 inch baking pan with butter or non-stick spray, or line with parchment paper with an overhang for easy removal. Set aside.
  2. In a large saucepan over low heat, melt 3 tablespoons of unsalted butter. Add 10 oz of mini marshmallows and stir continuously until fully melted and smooth, about 5 minutes.
  3. Remove from heat and stir in 1 teaspoon vanilla extract and a pinch of salt.
  4. Quickly add 6 cups of Rice Krispies cereal to the melted marshmallow mixture. Fold gently but thoroughly until every bit of cereal is coated.
  5. Gently fold in 1/2 cup of rainbow sprinkles, being careful to keep their shape and color intact.
  6. Pour the mixture into the prepared pan. Using a buttered spatula or lightly buttered hands, press the mixture evenly into the pan without pressing too hard.
  7. If using, warm 1/4 cup of birthday cake frosting slightly in the microwave for 10-15 seconds, then dollop on top and swirl gently with a knife or toothpick for a marbled effect.
  8. Let the treats cool at room temperature for at least 1 hour to set.
  9. Once cooled, lift the treats out using the parchment overhang if lined, and cut into squares or fun shapes. Store in an airtight container.
