A fun and healthy Halloween centerpiece made entirely from fresh vegetables, arranged to look like a skeleton. Perfect for parties, it’s quick to assemble and a guaranteed crowd-pleaser.

Ingredients

  • 1 large head of broccoli
  • 1 large head of cauliflower
  • 45 celery stalks, cut into 4-inch pieces
  • 1 cucumber, sliced into rounds
  • 1 red bell pepper, cut into strips
  • 1 cup cherry tomatoes
  • 1 cup hummus (thick, scoopable)
  • 2 tablespoons black olives, sliced
  • 1 small carrot, cut into thin strips
  • Fresh parsley or dill (optional, for garnish)
  • Pomegranate seeds (optional, for garnish)

Instructions

  1. Wash and thoroughly dry all vegetables. Wet veggies slide around and make the hummus runny.
  2. Take the cauliflower head and trim the bottom flat so it sits upright. Place it at the top center of your platter as the skull. Cut two small slits for the eyes and insert black olive slices. Cut a curved slit for the mouth and insert a thin carrot strip for teeth.
  3. Arrange cucumber slices in a straight line down the center of the platter, starting below the skull, leaving about an inch between each slice to form the spine.
  4. Break the broccoli into medium florets. Arrange them on both sides of the cucumber spine, curving outward like ribs, leaving a gap in the center for the dip bowl. Use about 4-5 florets per side.
  5. Place two celery stalks on each side of the ribcage, angled slightly downward for the upper arms. For the forearms, angle them inward toward the platter’s center. Use cherry tomatoes at the ‘elbow’ joints.
  6. Place two longer celery stalks at the bottom of the spine, spreading outward slightly for the legs. Add cucumber slices at the ‘knee’ joints. Finish with a cluster of cherry tomatoes for the feet.
  7. Place the small bowl of hummus in the center of the ribcage, where the heart would be.
  8. Scatter remaining cherry tomatoes, carrot sticks, and extra broccoli florets around the skeleton to fill empty spaces.
  9. Step back and adjust any pieces that look crooked. Use toothpicks to secure wobbly parts if needed.

Notes

Dry vegetables thoroughly to prevent hummus from sliding off. Use thick hummus for best results. Prep vegetables up to 24 hours in advance and assemble just before serving. Toothpicks can help secure wobbly pieces.
