  • 1 lb lean ground turkey (93% lean)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil (for browning turkey)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika (optional)
  • 1/4 tsp cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Juice of half a lime
  • 1 medium head cauliflower, riced (about 4 cups or 400g pre-riced cauliflower)
  • 1 tbsp olive oil or avocado oil (for sautéing cauliflower rice)
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper
  • Zest and juice of 1 lime
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup diced red onion (optional)
  • 1 avocado, sliced or diced
  • 1/2 cup shredded cheddar or Monterey Jack cheese (optional)
  • Greek yogurt or sour cream, to dollop
  • Hot sauce or salsa, as desired

Instructions

  1. Rice the cauliflower: Remove leaves and core, cut into florets, then pulse in a food processor or grate with a box grater until rice-sized pieces form. Set aside.
  2. Cook the cauliflower rice: Heat 1 tbsp olive oil in a large skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add cauliflower rice, season with salt and pepper, and cook for 5-7 minutes, stirring occasionally. Stir in lime zest and juice, then remove from heat and cover to keep warm.
  3. Prepare the turkey: Heat 1 tbsp olive oil in another large skillet over medium-high heat. Add chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for 30 seconds more.
  4. Add ground turkey, breaking it up with a spatula. Cook until no longer pink, about 6-8 minutes. Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Mix well to coat the meat evenly.
  5. Squeeze in lime juice and stir. Adjust seasoning if needed. If turkey feels dry, add a tablespoon of water or broth to keep moist.
  6. Assemble the bowls: Spoon cauliflower rice into bowls, top with spiced turkey, then add cherry tomatoes, avocado, cilantro, red onion, cheese, and a dollop of Greek yogurt or sour cream.
  7. Serve with hot sauce or salsa on the side while warm and fresh.

Notes

Do not overcook cauliflower rice to avoid mushiness. Brown turkey properly by letting it sit undisturbed initially for better texture. Adjust seasoning gradually and add extra lime juice for brightness. Cook cauliflower rice and turkey simultaneously to save time. For dairy-free, omit cheese and sour cream or use plant-based alternatives.
