  • 1/2 cup unsweetened applesauce (120g)
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup mini dark chocolate chips (90g)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, combine the dry ingredients: rolled oats, almond flour, whole wheat flour, coconut sugar, baking powder, ground cinnamon, and salt. Stir until evenly mixed.
  3. In a separate bowl, whisk the wet ingredients: unsweetened applesauce, egg, and vanilla extract until smooth and glossy.
  4. Pour the wet ingredients into the dry ingredients bowl. Fold together gently with a wooden spoon or spatula until combined. Avoid overmixing.
  5. Fold in the mini dark chocolate chips evenly.
  6. Scoop the dough onto the prepared baking sheet using a cookie scoop or tablespoon, spacing about 2 inches apart. Flatten each ball slightly with your fingers.
  7. Bake for 12-14 minutes until edges are lightly golden and centers remain soft. If edges brown too quickly, lower oven temperature by 10 degrees and bake longer.
  8. Remove from oven and let cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes
