  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 2 large eggs, room temperature
  • 1/2 cup milk (any kind works)
  • 1/3 cup maple syrup (or honey)
  • 2 tablespoons coconut oil, melted (or butter)
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips, chopped nuts, or dried cranberries (optional mix-ins)
  • Pumpkin seeds or coarse sugar for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with liners or grease it well with coconut oil.
  2. In a large bowl, whisk together the pumpkin puree, eggs, milk, maple syrup, melted coconut oil, and vanilla extract until smooth.
  3. In a separate medium bowl, mix the rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt.
  4. Pour the dry ingredients into the wet ingredients and stir until just combined. Fold in any optional mix-ins.
  5. Let the mixture sit for 5-10 minutes to allow the oats to absorb some liquid.
  6. Spoon the mixture into the prepared muffin cups, filling each almost to the top.
  7. Sprinkle the tops with pumpkin seeds or a pinch of coarse sugar if desired.
  8. Bake for 18-22 minutes, or until the tops are set and a toothpick inserted in the center comes out clean.
  9. Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Don’t skip the soaking step for tender cups. Use room temperature eggs to prevent coconut oil from seizing. Line with parchment liners to prevent sticking. Let cool completely before storing to avoid sogginess. For vegan version, replace eggs with flax eggs and use plant-based milk. For gluten-free, use certified gluten-free rolled oats.
