A light and refreshing twist on traditional tacos using crisp iceberg lettuce leaves as wraps filled with seasoned ground turkey and creamy guacamole. Quick, healthy, and perfect for busy weeknights.

  • 1 large head iceberg lettuce (about 12 large leaves), washed and dried
  • 2 tablespoons extra virgin olive oil
  • 1 small onion, finely chopped (yellow or white)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder (adjust to taste)
  • Salt and pepper to taste
  • Juice of 1 lime
  • 2 ripe avocados, peeled and pitted
  • 2 tablespoons plain unsweetened Greek yogurt
  • 2 tablespoons fresh cilantro, chopped (optional)
  • ½ cup cherry tomatoes, diced (optional)

Instructions

  1. Gently separate the leaves from the head of iceberg lettuce, keeping them whole and undamaged. Rinse under cold water, then pat dry thoroughly with paper towels or a clean kitchen towel. Set aside to keep crisp.
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté until translucent, about 3–4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for 6–8 minutes until no longer pink, stirring occasionally to brown evenly.
  4. Sprinkle in 1 teaspoon cumin, 1 teaspoon smoked paprika, ½ teaspoon chili powder, plus salt and pepper to taste. Stir well to combine and cook for an additional 2 minutes, allowing the spices to bloom. If the mixture looks dry, add a splash of water or chicken broth to keep it moist.
  5. In a mixing bowl, mash the ripe avocados with a fork or potato masher until smooth but slightly chunky. Stir in 2 tablespoons Greek yogurt, juice of 1 lime, and chopped cilantro. Season with a pinch of salt. For extra freshness, fold in diced cherry tomatoes if using.
  6. Spoon a generous amount of the turkey mixture onto each lettuce leaf, then top with a dollop of creamy guacamole. Roll or fold the lettuce around the filling to make a handheld wrap.
  7. Serve immediately for best taste and texture.

Notes

Avoid overcrowding the pan when cooking turkey to ensure browning and better flavor. Dry lettuce leaves thoroughly to prevent sogginess. For dairy-free guacamole, omit Greek yogurt and add a splash of olive oil instead. You can add a drizzle of hot sauce or sprinkle shredded cheese for extra flavor. Store turkey filling separately from lettuce and guacamole to keep wraps crisp.
