  • 3 to 4 pounds pork shoulder (pork butt), trimmed of excess fat
  • 1 cup honey (local or wildflower preferred)
  • 2 tbsp chipotle peppers in adobo sauce, finely chopped
  • 1/2 cup apple cider vinegar
  • 1/4 cup ketchup
  • 2 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and freshly ground black pepper to taste
  • 1/2 cup chicken broth or water
  • 2 large apples (Granny Smith or Honeycrisp), julienned or shredded
  • 1 cup shredded green cabbage
  • 1/4 cup shredded carrot
  • 2 tbsp mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • Salt and pepper to taste
  • Optional: handful of chopped fresh cilantro or parsley
  • Mini slider buns or dinner rolls, about 12
  • Optional: pickled jalapeños

Instructions

  1. Pat the pork shoulder dry with paper towels and trim excess fat if desired.
  2. In a medium bowl, whisk together honey, chopped chipotle peppers, apple cider vinegar, ketchup, smoked paprika, garlic powder, onion powder, salt, and pepper until smooth.
  3. Place the pork shoulder in the slow cooker and pour the sauce mixture over it, ensuring it gets into all nooks and crannies. Add chicken broth or water around the edges to keep the pork moist.
  4. Cover and cook on low for 6 to 8 hours, or until the pork is fork-tender and shreds easily.
  5. While the pork cooks, mix shredded apples, cabbage, carrot, mayonnaise, apple cider vinegar, honey, salt, and pepper in a large bowl. Toss to combine and refrigerate until serving. Drain excess moisture if needed to keep slaw crisp.
  6. Remove the pork from the slow cooker and shred it using two forks or meat claws.
  7. Return shredded pork to the slow cooker and stir into the cooking juices and sauce. Let it soak for 10-15 minutes on the warm setting.
  8. Just before serving, split and lightly toast the slider buns on a skillet or in the oven.
  9. Assemble sliders by piling pulled pork on the bottom bun, topping with apple slaw, adding pickled jalapeños if desired, and covering with the top bun.
  10. Serve immediately while warm.

Notes

If sauce is too thin after cooking, remove pork and simmer juices uncovered on stove to thicken before tossing back shredded meat. Toast buns lightly to prevent sogginess. Keep apple slaw separate until serving to maintain crispness. Pork shoulder with good marbling is best for tenderness. Adjust chipotle peppers to control spice level. Slaw mayo can be replaced with dairy-free alternatives for dairy-free diets. Can be made in Instant Pot using slow cooker or pressure cooking settings.
