Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 3 cloves garlic, minced
  • 1 ½ pounds ground turkey (93% lean recommended)
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt (plus more to taste)
  • ¼ teaspoon black pepper
  • 1 can (15 ounces) tomato sauce
  • 1 can (14.5 ounces) diced tomatoes (fire-roasted if available)
  • 2 cans (15 ounces each) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 cup low-sodium chicken broth
  • Optional toppings: shredded cheddar cheese, sour cream or plain Greek yogurt, diced avocado, fresh cilantro, crushed tortilla chips, lime wedges

Instructions

  1. Prep your ingredients: dice the onion, mince the garlic, drain and rinse the black beans, and measure out spices into a small bowl.
  2. Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat until shimmering.
  3. Add the diced onion and cook, stirring occasionally, for 4 to 5 minutes until translucent and soft.
  4. Stir in the minced garlic and cook for 30 seconds until fragrant.
  5. Add the ground turkey and break it up with a wooden spoon. Cook for 6 to 8 minutes until no longer pink.
  6. Sprinkle the chili powder, cumin, smoked paprika, oregano, salt, and pepper over the turkey. Stir and cook for 1 minute until spices are fragrant.
  7. Pour in the tomato sauce, diced tomatoes (with juices), and chicken broth. Stir, scraping up any browned bits from the bottom.
  8. Stir in the drained black beans and frozen corn. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 20 to 25 minutes, stirring occasionally.
  9. Taste and adjust seasoning with more salt, cumin, or a squeeze of lime juice if desired.
  10. Serve hot with desired toppings.

Notes

For a thicker chili, simmer uncovered longer. For a smoother texture, mash some beans with a potato masher. This chili freezes well for up to 3 months. Make it a day ahead for even better flavor.
