A simple, three-ingredient apple cider mimosa bar that’s perfect for fall brunches. Ready in 5 minutes, this light and refreshing drink lets the natural flavors shine.

Ingredients

  • Apple cider (not apple juice), chilled
  • Champagne or brut sparkling wine, chilled
  • Fresh rosemary sprigs or cinnamon sticks for garnish

Instructions

  1. Chill the apple cider and sparkling wine for at least 2 hours before serving.
  2. Wash and dry rosemary sprigs; trim to 4-5 inches. If using cinnamon sticks, have them ready.
  3. Fill each champagne flute or wine glass about one-third full with apple cider (about 2-3 ounces or 60 ml).
  4. Slowly pour chilled sparkling wine into each glass, tilting the glass slightly to preserve bubbles, until the glass is about three-quarters full (roughly 1 part cider to 2 parts wine).
  5. Gently slide a rosemary sprig or drop a cinnamon stick into each glass. Stir very gently once or twice.
  6. Serve immediately. For a crowd, set up a self-serve bar with chilled ingredients and garnishes.

Notes

Chill all ingredients thoroughly before serving. Use dry brut sparkling wine to balance the sweetness of the cider. Do not pre-mix; assemble fresh per glass to preserve bubbles. For a non-alcoholic version, substitute sparkling water or non-alcoholic sparkling cider.
