A quick and easy 30-minute meal that combines the comforting flavors of taco soup with a creamy ranch twist. This hearty, brothy soup is perfect for busy weeknights and tastes even better the next day.

Ingredients

Scale
  • 1 tablespoon olive oil (or avocado oil)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts or thighs (thighs stay juicier)
  • 4 cups low-sodium chicken broth
  • 1 can (15 oz) fire-roasted diced tomatoes, undrained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained (or 1.5 cups frozen corn)
  • 1 packet (1 oz) ranch seasoning mix
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup plain Greek yogurt or light sour cream
  • Juice of 1 fresh lime
  • Fresh cilantro, chopped (optional topping)
  • Shredded cheddar cheese (optional topping)
  • Diced avocado (optional topping)
  • Tortilla chips or strips (optional topping)

Instructions

  1. Heat the oil: Place your pot over medium heat and add the olive oil. Let it warm up for about 30 seconds—it should shimmer, not smoke.
  2. Sauté the aromatics: Add the diced onion and cook for 4-5 minutes, stirring occasionally, until it becomes translucent and soft. Add the minced garlic and cook for another 30 seconds until fragrant. Don’t let the garlic burn, or it will turn bitter.
  3. Add the chicken and seasonings: Place the chicken breasts or thighs into the pot. Sprinkle the ranch seasoning, chili powder, cumin, and smoked paprika directly over the chicken. Give everything a good stir to coat the chicken and onions in the spices. Let it cook for 2 minutes—this toasts the spices and deepens their flavor.
  4. Pour in the liquids: Add the chicken broth and the can of fire-roasted tomatoes (with their juices). Stir to combine, scraping up any browned bits from the bottom of the pot. That’s where the flavor is.
  5. Simmer: Bring the soup to a gentle boil, then reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the chicken is cooked through and tender. The internal temperature should reach 165°F (74°C) for breasts or 175°F (80°C) for thighs.
  6. Shred the chicken: Carefully remove the chicken pieces from the pot and place them on a cutting board. Use two forks to shred the meat into bite-sized pieces. It should pull apart easily.
  7. Add the beans and corn: Return the shredded chicken to the pot. Stir in the black beans and corn. Let it simmer for another 5 minutes to heat everything through.
  8. Finish with creaminess: Remove the pot from the heat. In a small bowl, whisk together the Greek yogurt (or sour cream) and lime juice. Slowly stir this mixture into the soup. This tempers the yogurt so it doesn’t curdle.
  9. Taste and adjust: Give the soup a taste. Add salt and pepper as needed. Remember that the ranch seasoning and chips will add salt, so go easy.
  10. Serve: Ladle the soup into bowls and top with your favorite toppings. I like a big handful of crushed tortilla chips and a sprinkle of fresh cilantro.

Notes

Don’t skip the yogurt tempering—mix it with lime juice first to prevent curdling. Toast the spices for 2 minutes to deepen flavor. Use fire-roasted tomatoes for a smoky depth. Shred the chicken instead of chopping for better texture. Let the soup rest for 10 minutes after cooking for flavors to meld. For freezing, add the yogurt-lime mixture after reheating.
