A light and refreshing fall twist on the classic mimosa, featuring sparkling apple cider, dry champagne, and a warm cinnamon sugar rim. Perfect for brunch, holiday gatherings, or any cozy morning.

Ingredients

Scale
  • Sparkling apple cider (chilled)
  • Brut champagne or prosecco (ice cold)
  • 2 tablespoons granulated sugar
  • 1 tablespoon ground cinnamon
  • Apple slices (for garnish)
  • Honey or maple syrup (optional, for rim)

Instructions

  1. Prepare the cinnamon sugar mixture: In a small plate, combine 2 tablespoons granulated sugar with 1 tablespoon ground cinnamon. Mix with a fork until evenly distributed.
  2. Prep the glass rims: Lightly dampen the rim of each champagne flute with a cut lemon or apple wedge, or by dipping in a thin layer of honey or maple syrup.
  3. Apply the cinnamon sugar: Gently twist the dampened rim into the cinnamon sugar mixture, rotating for even coverage. Tap off excess.
  4. Chill everything: Place the rimmed glasses in the refrigerator for at least 10 minutes.
  5. Pour the sparkling apple cider: Fill each glass about one-third full with chilled sparkling apple cider, pouring slowly down the side to preserve bubbles.
  6. Add the champagne: Top off each glass with brut champagne or prosecco, filling to about three-quarters full. Ratio is roughly 1 part cider to 2 parts champagne.
  7. Garnish: Drop a thin apple slice into each glass. Optionally, add a cinnamon stick.
  8. Serve immediately: Serve right away while the rim is crisp and the drink is cold.

Notes

Chill all ingredients and glasses beforehand for best results. The rim is key—use a light touch with honey or water to avoid sugar sliding off. For a non-alcoholic version, substitute ginger ale or non-alcoholic sparkling wine. Batch prep rims ahead and keep in fridge for easy hosting.
