These spooky ghost-shaped cheese nachos are a quick and easy Halloween snack that comes together in just 10 minutes. Made with black beans, tortilla chips, and melted cheese, they’re perfect for parties and guaranteed to impress.

  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 bag (10 oz / 283 g) restaurant-style tortilla chips
  • 2 cups (200 g) shredded Monterey Jack cheese
  • 1 cup (100 g) shredded cheddar cheese
  • 68 slices mozzarella cheese, about 1/4 inch thick
  • 1 small black olive, sliced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: 1/4 cup (60 ml) salsa verde for drizzling
  • Optional: Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Drain and rinse the black beans in a colander under cold water. Shake off excess water. In a small bowl, mash about half the beans with a fork. Leave the rest whole for texture. Stir in the cumin, smoked paprika, and a pinch of salt and pepper. Set aside.
  3. Spread the tortilla chips in a single layer on the baking sheet. Don’t overlap them too much.
  4. Spoon the bean mixture evenly over the chips. Use the back of the spoon to spread it out a bit, but don’t press too hard.
  5. Sprinkle the Monterey Jack and cheddar cheeses evenly over the beans.
  6. While the nachos bake, prepare the ghost cheese. Use a ghost-shaped cookie cutter to cut out ghost shapes from the mozzarella slices. Place the ghosts on a small plate. Use the sliced black olives to create eyes—cut small circles from the olive slices and press them gently into the cheese ghosts.
  7. Place the baking sheet in the preheated oven and bake for 8-10 minutes, until the cheese is melted and bubbly and the chips are golden brown at the edges.
  8. Remove the nachos from the oven. Immediately place the ghost cheese slices on top of the hot nachos. If you want them extra melty, return the sheet to the oven for 1-2 more minutes.
  9. Drizzle with salsa verde if using, and sprinkle with fresh cilantro. Serve immediately.

Notes

For best results, use sturdy restaurant-style tortilla chips to prevent breakage. Add the ghost cheese after baking to maintain their shape. The black bean mixture can be made a day ahead and stored in the refrigerator.
