Ingredients

Scale
  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (115g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 8 oz (225g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 1 ½ cups (180g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • 23 tbsp milk or cream
  • 1 ½ cups strawberries, sliced
  • 1 cup blueberries
  • 1 cup kiwi, peeled and sliced thin
  • Optional: a handful of raspberries or blackberries

Instructions

  1. Prepare the Crust Dough (15 minutes plus chilling time): In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (3-4 minutes using an electric mixer). Add the egg and vanilla extract, mixing until combined.
  2. Mix in Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the dry ingredients to the butter mixture, mixing just until a dough forms. Do not overmix.
  3. Chill the Dough: Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. Preheat the Oven and Prepare Pan: Heat oven to 350°F (175°C). Lightly grease a 9-inch round pizza pan or line with parchment paper.
  5. Roll Out the Dough: On a floured surface, roll dough into a 9-inch circle about ¼ inch thick. Transfer to pan and prick holes with a fork to prevent puffing.
  6. Bake the Crust: Bake for 15-18 minutes or until golden brown around edges. Cool completely on a wire rack.
  7. Make the Cream Cheese Frosting (10 minutes): Beat softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, then add milk a tablespoon at a time until spreadable but thick.
  8. Assemble the Pizza: Spread an even layer of frosting over cooled crust. Arrange sliced strawberries in stripes covering about two-thirds of the pizza. Place blueberries in the top-left corner. Use kiwi slices or leave bare the white stripes to complete the flag design.
  9. Chill Before Serving: Refrigerate for at least 30 minutes to let frosting set and flavors meld.
  10. Serve and Enjoy: Slice carefully with a sharp knife and serve chilled.

Notes

Use softened cream cheese for smooth frosting. Do not overmix dough to keep crust tender. Pat fruit dry to avoid sogginess. Assemble close to serving time or chill well. For gluten-free, use gluten-free flour blend; for dairy-free, substitute cream cheese and butter with coconut-based alternatives.
