Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners or grease lightly.
  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a large bowl, beat softened butter with eggs until pale and fluffy, about 3-4 minutes on medium speed.
  4. Alternately add the dry ingredients and milk to the butter-egg mixture, beginning and ending with dry ingredients. Stir in vanilla extract. Mix gently until combined.
  5. Spoon batter evenly into cupcake liners, filling about ⅔ full.
  6. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool cupcakes completely on a wire rack, about 30 minutes.
  8. For frosting, beat cream cheese and butter until smooth, about 3-4 minutes. Gradually add powdered sugar and vanilla extract, mixing well after each addition. Add purple gel food coloring and a pinch of salt; beat until fluffy.
  9. Pipe a flat, even layer of purple frosting on each cooled cupcake.
  10. Pipe concentric circles of black gel icing or melted dark chocolate over the frosting. Using a toothpick, drag lines from the center outward to create the spider web effect.
