Instructions

  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until the mixture looks like wet sand and holds together when pressed.
  3. Press the crust firmly into the bottom of the prepared pan, smoothing it out evenly. Bake for 8-10 minutes until set and lightly golden. Let it cool.
  4. In a large bowl, beat softened cream cheese until smooth and fluffy, about 2-3 minutes. Scrape down the sides to avoid lumps.
  5. Gradually add sugar, mixing until fully combined.
  6. Beat in eggs one at a time, mixing just until incorporated to avoid overmixing.
  7. Mix in vanilla extract and sour cream until the batter is silky and smooth.
  8. Pour cheesecake batter evenly over the cooled crust, smoothing the top with a spatula.
  9. Arrange the berries on top to create the flag pattern: cluster blueberries in the top left corner and place sliced strawberries in stripes across the rest.
  10. Bake the bars for 35-40 minutes, or until the edges are set but the center still slightly jiggles when gently shaken.
  11. Cool completely at room temperature for about an hour, then refrigerate for at least 3 hours or overnight.
