Perfect Pomegranate Champagne Mocktail for New Year’s Eve

A simple, elegant mocktail that combines tart pomegranate juice with crisp bubbles and fresh rosemary for a festive, alcohol-free celebration drink.

Ingredients

  • 1 cup pomegranate juice, chilled
  • 1 cup champagne or sparkling water, chilled
  • 46 fresh rosemary sprigs
  • 1/4 cup pomegranate seeds
  • 12 tablespoons honey or simple syrup, to taste
  • Ice cubes (optional)
  • Orange slices or lemon wheels for garnish

Instructions

  1. Prepare the garnishes first: wash and dry the rosemary sprigs, slice the orange or lemon into thin wheels, and set aside about 1/4 cup of pomegranate seeds.
  2. In a pitcher or large measuring cup, combine 1 cup of chilled pomegranate juice with 1-2 tablespoons of honey or simple syrup. Stir gently until the sweetener is fully dissolved. Taste and adjust sweetness if needed.
  3. Chill the pitcher in the fridge for 5-10 minutes while you get your glasses ready.
  4. Place a rosemary sprig in each glass. Add a few pomegranate seeds to the bottom of each glass.
  5. Remove the pitcher from the fridge. Gently pour in 1 cup of chilled champagne or sparkling water. Stir once or twice with a bar spoon—do not overmix.
  6. Divide the mixture evenly among the four glasses. Top each with an orange slice or lemon wheel. If using ice, add it after the liquid.
  7. Serve immediately within 10 minutes of making.

Notes

Chill all ingredients beforehand to keep bubbles lively. For a more intense rosemary flavor, gently press the rosemary sprig against the inside of the glass with a muddler before adding liquid. The pomegranate juice mixture can be made a day ahead and stored in the fridge.
