Ingredients

  • Sourdough or rustic country bread, sliced thick (about 3/4 inch)
  • Ripe avocado, mashed with a squeeze of fresh lemon juice
  • Thinly sliced smoked salmon
  • Large farm-fresh eggs (room temperature)
  • Fresh dill, finely chopped
  • Fresh chives, finely chopped
  • Sea salt, to taste
  • Black pepper, to taste
  • High-quality extra virgin olive oil, for drizzling
  • Optional: capers
  • Optional: thinly sliced red onion
  • Optional: halved cherry tomatoes
  • Optional: lemon wedges

Instructions

  1. Bring a pot of water to a gentle boil. Using a slotted spoon, carefully lower large room temperature eggs into the water. Boil for exactly 6 minutes for jammy yolks.
  2. Immediately transfer eggs to an ice bath to stop cooking. After 5 minutes, gently peel and set aside.
  3. Slice sourdough bread thick (about 3/4 inch). Toast until golden and crispy using a toaster or grill pan. Optionally brush slices lightly with olive oil before toasting.
  4. In a mixing bowl, scoop out ripe avocado flesh. Add a squeeze of fresh lemon juice, a pinch of sea salt, and a grind of black pepper. Mash with a fork until smooth but slightly chunky.
  5. Spread a generous layer of mashed avocado on each toast slice.
  6. Layer thin slices of smoked salmon on top, folding gently to create volume and texture.
  7. Sprinkle finely chopped dill and chives over the salmon. Add optional toppings like capers, thinly sliced red onion, or halved cherry tomatoes if desired.
  8. Arrange the assembled toasts on a serving board. Halve the jammy eggs and nestle them between the toasts.
  9. Drizzle a little olive oil and sprinkle a final pinch of salt and pepper over everything. Add lemon wedges on the side for optional fresh squeeze.
