A quick and easy herb butter roasted turkey breast for two, ready in just 30 minutes. Perfect for a cozy weeknight dinner without the fuss of a whole turkey.

Ingredients

Scale
  • 1 to 1.5 pounds (450 to 680 grams) boneless, skin-on turkey breast
  • 4 tablespoons (56 grams) unsalted butter, softened
  • 3 cloves fresh garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh sage, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon kosher salt (use ¾ teaspoon if using table salt)
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • ¼ cup (60 ml) chicken or turkey broth

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Make the herb butter: In a small bowl, combine the softened butter, minced garlic, chopped rosemary, sage, thyme, ½ teaspoon of the salt, and ¼ teaspoon of the pepper. Mix with a fork until evenly distributed. Set aside.
  3. Prep the turkey: Pat the turkey breast dry with paper towels. Season both sides with the remaining ½ teaspoon salt and ¼ teaspoon pepper.
  4. Apply the herb butter: Gently loosen the skin from the meat to create a pocket. Spread about half of the herb butter directly onto the meat under the skin. Rub the remaining butter all over the outside of the breast.
  5. Sear the turkey: Heat the olive oil in an oven-safe skillet over medium-high heat. Place the turkey breast skin-side down and sear for 3-4 minutes until golden brown. Flip and sear the other side for 2 minutes.
  6. Add broth and roast: Pour the broth into the pan around the turkey. Transfer the skillet to the preheated oven and roast for 15-20 minutes, until the internal temperature reaches 155°F (68°C) at the thickest part.
  7. Rest and serve: Remove from the oven, transfer the turkey to a cutting board, and tent loosely with foil. Let rest for 5-10 minutes. The temperature will rise to 160°F (71°C). Slice and serve with pan juices.

Notes

For best results, pat the turkey dry to ensure crispy skin. Use a meat thermometer to avoid overcooking. If the turkey breast is thicker than 1.5 inches, add 5 minutes to the roasting time. Let the butter soften before applying to prevent tearing the skin.
