Instructions

  1. Prep the Ingredients (10 minutes): Slice chicken breasts into thin strips about 1/4-inch thick. Chop broccoli into bite-sized pieces. Mince garlic finely. Rinse jasmine rice under cold water until water runs clear.
  2. Cook the Jasmine Rice (15 minutes): In a medium saucepan, combine rinsed jasmine rice with water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes until water is absorbed. Remove from heat and let sit, covered, for 5 minutes.
  3. Make the Honey Garlic Sauce (2 minutes): In a small bowl, whisk together honey, soy sauce, rice vinegar, and sesame oil. Set aside.
  4. Cook the Broccoli (5 minutes): Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add broccoli florets and stir-fry for 3-4 minutes until bright green and starting to crisp on the edges. Remove broccoli and set aside.
  5. Cook the Chicken (5-6 minutes): In the same skillet, add another tablespoon of oil if needed. Add sliced chicken and cook without moving for 2 minutes to get a slight sear. Stir and cook until mostly cooked through, about 3 more minutes.
  6. Add Garlic and Sauce (2 minutes): Push chicken to the side of the pan, add minced garlic, and cook until fragrant, about 30 seconds. Pour honey garlic sauce over chicken, stirring to coat evenly. Let it bubble and thicken slightly, about 1-2 minutes.
