This quick maple roasted delicata squash rings recipe is the accidental overachiever—ready in 30 minutes with five simple ingredients, minimal mess, and a naturally sweet and savory flavor that steals the show at any meal.

Ingredients

Scale
  • 1 medium delicata squash (about 1 to 1.5 pounds)
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons pure maple syrup
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • Optional: ¼ teaspoon cinnamon or smoked paprika
  • Optional: Fresh thyme or rosemary for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the delicata squash thoroughly and pat dry.
  3. Slice off both ends of the squash (about ¼ inch from each end).
  4. Slice the squash into ½-inch thick rings.
  5. Scoop out the seeds and strings from each ring.
  6. Place the rings in a medium mixing bowl. Add olive oil, maple syrup, salt, and pepper (plus optional spices if using). Toss gently until every ring is evenly coated.
  7. Line a baking sheet with parchment paper. Arrange the squash rings in a single layer without overcrowding.
  8. Roast for 12 minutes.
  9. Flip each ring carefully.
  10. Roast for another 8 to 12 minutes, until golden brown on the edges and tender when pierced with a fork.
  11. Remove from the oven and let rest for 2 minutes.
  12. Transfer to a serving platter. Garnish with fresh thyme or rosemary if desired.

Notes

Do not skip flipping the rings halfway through for even caramelization. Watch the edges carefully in the last 5 minutes to prevent burning. Use room temperature maple syrup for even coating. Let the squash rest for 2 minutes after roasting to allow the caramelized sugar to set. For best texture, serve immediately or reheat in a 350°F oven for 5-7 minutes.
