A frosty, tangy slushie combining fresh strawberries, lemon juice, vodka, and simple syrup for a perfect summer drink that’s quick and easy to make.

Ingredients

  • 2 cups fresh strawberries, hulled and halved
  • 1/2 cup fresh lemon juice (about 120 ml)
  • 1 cup vodka (240 ml)
  • 1/4 cup simple syrup (60 ml), or honey/agave as a substitute
  • 3 cups ice cubes (about 700 grams), crushed or regular
  • Optional: fresh mint leaves for garnish

Instructions

  1. Rinse and hull the strawberries. Slice them in halves or quarters depending on size.
  2. Roll lemons firmly on the counter and juice them until you have 1/2 cup (120 ml). Strain to remove seeds if needed.
  3. If making simple syrup, combine equal parts sugar and water in a small saucepan. Heat gently until sugar dissolves. Cool before using. (Or use store-bought syrup or honey.)
  4. Add strawberries, lemon juice, vodka, simple syrup, and 3 cups of ice cubes to a high-speed blender.
  5. Pulse at first to crush ice, then blend on high until smooth but still thick enough to sip. Avoid over-blending to prevent melting too thin.
  6. Check consistency and adjust: if too thick, add a splash of cold water or lemon juice; if too thin, add more ice and pulse again.
  7. Pour into chilled glasses, garnish with fresh mint or a lemon wheel, and serve immediately with a straw.

Notes

Use crushed ice for a smoother texture. Chill ingredients before blending to keep the slush extra refreshing. You can prep the fruit, vodka, and syrup mixture up to 24 hours ahead and blend with fresh ice before serving. For a lower alcohol version, reduce vodka and add sparkling water. Frozen strawberries can be used with less ice for a thicker slush.
