Refreshing Watermelon Mojito Pitcher Recipe

  • 4 cups (600 grams) fresh watermelon, cubed, seedless if possible
  • 2025 fresh mint leaves, gently bruised
  • 3 fresh limes, juiced (about 6 tablespoons or 90 ml)
  • 1 cup (240 ml) white rum (optional for mocktail version)
  • 1/4 cup (60 ml) simple syrup, homemade or store-bought
  • 1 cup (240 ml) soda water (club soda)
  • Ice cubes, enough to fill the pitcher
  • Optional garnishes: lime slices, extra mint sprigs, small watermelon wedges

Instructions

  1. Place the cubed watermelon in a blender or food processor and pulse until smooth (about 30-45 seconds). For a smoother texture, strain through a fine mesh strainer to remove pulp. Set aside about 2 cups (480 ml) of watermelon juice.
  2. In a large pitcher, add the fresh mint leaves. Gently muddle with a muddler or the back of a wooden spoon for about 30 seconds to release oils without tearing the leaves.
  3. Add the freshly squeezed lime juice and simple syrup to the pitcher. Stir gently to combine and infuse the syrup with mint flavor. Adjust sweetness to taste.
  4. Pour in the white rum and watermelon juice. Stir well to combine all ingredients.
  5. Fill the pitcher with ice cubes (about 2 cups or enough to chill well). Top with soda water and stir gently to mix without losing fizz.
  6. Garnish with lime slices, extra mint sprigs, or small watermelon wedges. Serve immediately in tall glasses over extra ice.

Notes

Do not over-muddle the mint leaves to avoid bitterness. Add soda water just before serving to keep fizz. For a mocktail, omit rum and add extra soda water or sparkling lemonade. Prepare watermelon juice and lime-mint syrup mixture up to a day ahead and combine with soda and ice before serving. Use ripe watermelon for best flavor. Leftovers keep well up to 24 hours without ice and soda; add fresh ice and soda before serving again.
