  • 1 large yellow onion, sliced

  • ½ cup apple cider
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 45 sprigs fresh thyme
  • 3 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 tablespoon cornstarch (optional, for thicker gravy)

Instructions

  1. Preheat oven to 400°F (200°C). Pat pork chops dry with paper towels and season generously with salt and pepper.
  2. Heat butter and olive oil in a large oven-safe skillet over medium-high heat. Sear pork chops for 3-4 minutes per side until deep golden brown. Transfer to a plate.
  3. Reduce heat to medium. Add sliced onion to the skillet and sauté for 4-5 minutes, scraping up browned bits, until softened and golden. Add garlic and cook 30 seconds until fragrant.
  4. Add sliced apples, apple cider, and chicken broth to the skillet. Stir, scraping up any remaining bits. Add fresh thyme sprigs.
  5. Return pork chops to the skillet, nestling them among the apples and onions. Spoon some liquid over the chops.
  6. Transfer skillet to the oven and bake for 15-20 minutes, until internal temperature reaches 145°F (63°C).
  7. Remove skillet from oven. Transfer pork chops to a plate and tent with foil; rest for 5-10 minutes.
  8. For thicker gravy, place skillet over medium heat. Stir cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) into simmering mixture. Cook 1-2 minutes until thickened. Remove thyme sprigs.
  9. Serve pork chops with apple onion gravy spooned over the top.

Notes

For best results, use bone-in pork chops about 1-inch thick. Let the meat rest after baking to retain juices. If using boneless chops, reduce baking time by a few minutes.
