Instructions

  1. Trim excess fat off the brisket, leaving about 1/4 inch for moisture.

  3. Rub the spice mixture generously all over the brisket, pressing it into the meat. Let it sit at room temperature for 30 minutes.

  5. Place brisket fat side up on the grate and smoke for about 6 hours, spritzing every hour with apple cider vinegar.

  12. Slice the brisket thinly against the grain.
