  • ¼ cup granulated sugar (50g)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon chili powder (adjust to taste)
  • A pinch of ground nutmeg (optional)
  • A pinch of salt
  • 2 tablespoons unsalted butter, melted (or dairy-free butter/coconut oil as substitute)

Instructions

  1. Peel and core the fresh pineapple, then slice into ½-inch (1.25 cm) thick rings or wedges.
  2. In a small bowl, combine ¼ cup granulated sugar, 1 teaspoon cinnamon, ½ teaspoon chili powder, a pinch of nutmeg (optional), and a pinch of salt. Stir well to blend.
  3. Melt 2 tablespoons unsalted butter and lightly brush both sides of the pineapple slices.
  4. Generously dust each pineapple slice with the cinnamon sugar spice mixture, pressing lightly so it sticks.
  5. Preheat grill to medium-high heat, about 375–400°F (190–205°C). Ensure grates are clean and lightly oiled.
  6. Place pineapple slices on the grill and cook for 3–4 minutes per side until deep grill marks and caramelized edges form. Flip carefully using tongs.
  7. Remove grilled pineapple and transfer to a serving platter. Serve warm or at room temperature.

Notes

Use ripe but firm pineapple for best grilling texture. Adjust chili powder to control heat level. Substitute coconut oil for butter for a tropical twist or dairy-free option. Avoid overcooking to prevent mushy texture. Leftovers keep well refrigerated for up to 3 days and can be reheated or enjoyed chilled. Optional toppings include honey drizzle or toasted coconut flakes.
