Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Melt the butter in a small saucepan or microwave-safe bowl. Set aside to cool for about 5 minutes.
  3. In a large mixing bowl, whisk together the melted butter, 1 cup granulated sugar, and 1/4 cup brown sugar until smooth and combined. Add the egg, vanilla extract, and molasses. Whisk vigorously until the mixture is smooth, glossy, and slightly thickened (about 30 seconds).
  4. In a separate medium bowl, whisk together the flour, baking soda, cream of tartar, ginger, cinnamon, cloves, nutmeg, salt, and cornstarch.
