  • 3/4 cup milk (dairy or plant-based)
  • 1 tablespoon hot sauce (e.g., Frank’s RedHot)
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot Buffalo Wing Sauce)
  • 2 tablespoons melted butter (or vegan butter)
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder (for ranch)
  • 1/2 teaspoon onion powder (for ranch)
  • 1/4 teaspoon salt (for ranch)
  • 1/4 teaspoon black pepper (for ranch)

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper and place a wire rack on top if available. Spray rack lightly with cooking spray. Wash and cut cauliflower into bite-sized florets, patting them dry thoroughly.
  2. In a medium bowl, whisk together flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Add milk and 1 tablespoon hot sauce, whisk until smooth and thick (pancake batter consistency).
  3. In a separate shallow bowl, combine panko breadcrumbs with a pinch of salt and pepper.
  4. Working in batches, dip each cauliflower floret into the batter, letting excess drip off, then roll in panko breadcrumbs, pressing gently to adhere. Place coated florets on prepared wire rack or baking sheet, leaving space between each.
  5. Let coated cauliflower rest on baking sheet for 10 minutes before baking to help coating adhere.
