Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs (about 2 pounds)
  • 4 tablespoons unsalted butter, divided
  • 6–8 garlic cloves, thinly sliced
  • 1/2 cup low-sodium chicken broth
  • 4–5 fresh thyme sprigs
  • 1 teaspoon kosher salt (Diamond Crystal; use 1/2 teaspoon if using table salt)
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.
  2. Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Add 2 tablespoons of butter and let it melt and foam until the foam subsides and the butter smells nutty, about 2 minutes.
  3. Place the chicken thighs skin-side down in the hot butter. Cook undisturbed for 5-6 minutes until the skin is deep golden brown and releases easily. Flip and cook the other side for 3 minutes.
  4. Transfer the seared chicken to a plate. Leave the pan on the heat.
  5. Reduce heat to medium-low. Add the sliced garlic and remaining 2 tablespoons of butter. Stir constantly for about 30 seconds until fragrant and just softened. Do not let the garlic brown.
  6. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let simmer for about 1 minute.
  7. Add the fresh thyme sprigs and lemon juice. Stir to combine.
  8. Return the chicken thighs to the pan, skin-side up. Spoon some sauce over the tops. Simmer for 8-10 minutes until the chicken is cooked through (internal temperature reaches 165°F).
  9. Sprinkle fresh parsley over the top. Let the chicken rest in the pan for 2-3 minutes before serving.

Notes

Pat the chicken dry for crispy skin. Watch the garlic carefully to prevent burning. Let the chicken rest after cooking for best texture. For boneless, skinless thighs, reduce sear time to 3-4 minutes per side and simmer for 5-6 minutes.
