  • 2 tablespoons unsalted butter (melted and slightly cooled)
  • ½ cup baking soda
  • 6 cups water (for boiling)
  • 1 large egg (beaten with 1 tablespoon water for egg wash)

  • 1 tablespoon melted butter (for brushing after baking, optional)
  • Sliced almonds (one per pretzel bite)

Instructions

  1. In a large mixing bowl, combine warm water (110°F to 115°F), brown sugar, and active dry yeast. Stir gently and let sit for 5 to 10 minutes until foamy.
  2. Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined, then gradually add the remaining 1 ½ cups of flour, ½ cup at a time, until a shaggy dough forms.
  3. Turn dough onto a lightly floured surface and knead for 5 to 7 minutes until smooth and elastic.
  4. Place dough in a lightly greased bowl, cover with a towel or plastic wrap, and let rise in a warm spot for 30 to 45 minutes until doubled in size.
  5. Punch down the dough and divide into 12 to 16 equal pieces. Roll each piece into a 4- to 5-inch rope, shaping one end thicker (palm) and tapering the other (fingertip). Score 2 to 3 shallow lines for knuckles and press a sliced almond into the tapered end for the fingernail. Optionally, dab red food coloring or paprika under the almond.
  6. Bring 6 cups of water to a boil in a large pot. Carefully add ½ cup baking soda (it will fizz). Boil 2 to 3 shaped pretzels at a time for 20 to 30 seconds per side. Remove with a slotted spoon and place on a parchment-lined baking sheet, spacing 2 inches apart.
  7. Brush each pretzel bite with egg wash and sprinkle generously with coarse salt. Bake at 425°F for 12 to 15 minutes until deep golden brown.
